Ricki Carroll, known to her loyal fans as, "The Cheese Queen", has been teaching cheese making to beginners for 30 years. Fun for all ages! This full day of Hands-On Cheese Making takes place at the home of the Queen in her beautiful house in Ashfield. These classes are large and still fill up quite quickly. So sign up soon to join us in making Farmhouse Cheddar, Queso Blanco, Mascarpone, Whole Milk and Whey Ricotta and a 30 Minute Mozzarella. Plus, learn to make Fromage Blanc, Creme Fraiche, Mascarpone and Yogurt. The workshops are held on Saturdays. 10-5. There is a one hour break for a delicious lunch with a sampling of the tasty cheeses we have made. A FREE copy of Ricki's Cheese Making 101 DVD is included with class.
Jim Wallace is our expert technical cheese resource. Each year he teaches several workshops of varying styles and levels. The classes are much smaller (10-14 people) than our 101 classes and provide more time for individualized instruction and questions. Each session begins with details of the milk and examines the process complete through the final aging requirements. The classes are great for even new cheese makers starting out. These classes are all designed to give you the foundation you are looking for. The workshops are held on Saturday and Sunday. They are 7 hours long, starting at 9:00am and running through 4:00pm. Try one, you'll love it!
