Ricki Carroll, known to her loyal fans as, "The Cheese Queen", has been teaching these cheese making classes to beginners for 30 years. Fun for all ages! A full day of Hands-On Cheesemaking at home with Ricki in her beautiful house in the foothills of the Berkshires. Join us in making Farmhouse Cheddar, Queso Blanco, Mascarpone, Whole Milk and Whey Ricottas and a 30 Minute Mozzarella. Plus learn to make Fromage Blanc, Creme Fraiche and Mascarpone. The workshop starts at 10:00 am and runs through 4:00pm. There is a one hour break for a delicious lunch with a sampling of our tasty cheeses. A FREE copy of Ricki's Cheesemaking 101 DVD is included with class.


Jim Wallace has been with us now a number of years teaching and answering our technical questions. He has been putting together our great online newsletter which has gotten rave reviews. Jim is an expert photographer, a great teacher and a wealth of knowledge. You will be delighted with his classes. They have been so well received that people have been returning class after class for more. These classes are more technical in scope but are fine for the cheesemaker who is starting out and wants to learn more details of the process. They are smaller than our 101 classes (10-14 people) which gives you more time for individualized instruction and questions.

The Italian class is a focused 2 days of making fabulous cheese unique to Italy with lots of stories, history, etc to go with it. We start with the basics and build from there. Great for even new cheese makers.

The Basics Plus cover a wide spectrum of cheese styles to get the new cheese maker up and going with this 2 day class. This will give you the foundation you are looking for.
