Ricki Carroll, known to her loyal fans as, "The Cheese Queen", has been teaching these cheese making classes to beginners for 30 years. Fun for all ages! A full day of Hands-On Cheesemaking at home with Ricki in her beautiful house in the foothills of the Berkshires. Join us in making Farmhouse Cheddar, Queso Blanco, Mascarpone, Whole Milk and Whey Ricottas and a 30 Minute Mozzarella. Plus learn to make Fromage Blanc, Creme Fraiche and Mascarpone. The workshop starts at 10:00 am and runs through 4:00pm. There is a one hour break for a delicious lunch with a sampling of our tasty cheeses. A FREE copy of Ricki's Cheesemaking 101 DVD is included with class.

Jim Wallace is our expert technical cheese resource. Each year he teaches several workshops of varying styles and levels. The classes are much smaller (10-14 people) than our 101 classes and provide more time for individualized instruction and questions. Each session begins with details of the milk and examines the process complete through the final aging requirements. The classes are great for even new cheese makers starting out. These classes are all designed to give you the foundation you are looking for.
