Here are some of the staples you will need in your kitchen for cheesemaking. The trier is something that you may want to purchase once you have had your hard cheeses aging for a while and you can't wait to taste them!

Cheese Wrap

Click HERE for more details on our wrapping papers and how to use them !

Cheese Wrap for Mold Ripened or Soft Cheeses
A paper for the white mold ripened cheeses such as Camembert and soft ripened cheeses.

The 'Real Deal' from France, a 2 part breathable paper. The inner paper pulls moisture away from the surface and its parafin coating keeps the candidum mold from growing into the paper.
The outer layer allows gases to be exchanged while controlling the moisture loss, essentially allowing the white mold to remain active and not excessive.
Please choose 25, 50 or 100 papers in sizes of 7-7/8", 9-7/8" or 15-3/4" square from the drop down menu below.

Cheese Wrap for Washed Rind Cheeses
This wrap is 2 layers, an inner layer of thin sulphurized grease proof paper to pull moisture away from the surface of the cheese and restrain the surface mold growth. Bonded to a 20 micron transparent micro-perferated Polypropylene layer will allow gases to be exchanged while controlling the moisture loss and prevent the very common problem of crystal formation which results in grainy or sandy rinds.
The transparent outer layer allows the cheese to be seen through the thin inner paper which becomes somewhat translucent after wrapping.
Use largest for Munster, Trappist, Blue, Tallegio, etc. Medium size for Reblochon types and the smallest for small camembert types of cheeses.
Please choose 25, 50 or 100 papers in sizes 9-7/8", and 16-7/8"square from the drop down menu below.
