Cheesemaking 101 Fun for all ages! A full day of Hands-On Beginners Cheesemaking at home with Ricki Carroll. Join us in making Farmhouse Cheddar, Queso Blanco, Mascarpone, Whole Milk and Whey Ricottas and a 30 Minute Mozzarella. Plus learn to make Fromage Blanc, Creme Fraiche and Mascarpone.
While learning the basic principles of cheesemaking we will cover care and use of equipment and you will make new friends sharing similar interests. A FREE copy of Ricki's DVD is included with the 101 class. These classes have become so popular that we have had to open them up to the first 40 eager participants. To insure a place sign up early.

Cheesemaking 201 
Jim Wallace has been with us now a number of years teaching and answering our technical questions. He has been putting together our great online newsletter which has gotten rave reviews. Jim is an expert photographer, a great teacher and a wealth of knowledge. You will be delighted with his classes, they have been so well received that people have been returning class after class for more. These classes are more technical in scope but are fine for the cheesemaker who is starting out to learn more details of the process. They are smaller than our 101 classes which gives you more time for individualized instructions and questions. Try one, you'll love it!
  
  
Cheesemaking ... The Basics Apr 26-27, 2008 
Your Next Big Step in Cheese Making
Once you have tried cheesemaking this will get you going into a range of semisoft to hard cheeses.
In this class we will explain the process in detail while we explore the process from Camembert to Cheddar, taste a lot of cheese and generally have a really fun time. While developing and improving your skills for cheese making we will explore all of your technical questions. From this class you will have the background to move ahead into making many of the delicious cheeses you find at the store and your neighbors will hunger for more when you serve your sumptuous new delights!

Blue by You ... May 31-June 1, 2008 
Everyone loves blue cheese ... if not ... they just haven't tasted good blue yet.
This workshop will explore the range of Blue cheese ... from mild to strong ... from young to old.
We will examine the details of curd production, blue mold sources/development, ripening, and cellar management. During the 2 days we will compare and contrast the differences in how several blue cheeses are made and of course discuss a bit of their history.
***This workshop will work best for those who have made a few cheeses and are ready to explore some new territory, building their skills as we go.

If you need to cancel for any reason and you notify us 2 weeks before your class you will receive a full refund or if space is available you may change the date into another class.
In the cases of any cancellation closer than 2 weeks prior to a class we can not refund your money unless we can fill your spot from our waiting list.
