Eastleigh Farm cattle are pastured and grass fed throughout most of the year. The operation is very close to being organic without being certified. The herd consists of mostly Jerseys (high in butter fat) with a few Guernseys, Holsteins, and Brown Swiss. All of the cattle are born and raised on the two farms that are within close proximity to each other in Framingham, Massachusetts. Our raw milk is only available from our farm stand. It is produced according to the strict regulation of the Department of Agriculture. A release form is required for all raw product sales according to state law. We graze our 200 cow herd on our own pasture, using the cows to naturally improve the soil and sustain the land. Allowing the cows fresh air, sunshine and green grass promotes their health and the quality of our products. |

Cows are outdoor and milked on the premises, all milk is sold locally.
If you live nearby you can still get home delivery. Milk is pasteurized in a low-temperature (146°) vat pasteurizer, held at this temperature for 30 minutes and then cooled to 40 degrees, or lower, before it is bottled.
It is not homogenized, so the cream rises to the top of the milk. Awesome.

| Today Lifeline Farm Inc. is a partnership between three of the early members, Ernie Harvey, Luci Breiger, and Steve Elliot. The farm has formed two distinct parts, Lifeline Dairy and Lifeline Produce. Steve and Luci, who manage the produce, grow vegetables, herbs and flowers as well as caring for around 20 sheep and selling their lambs. All of the produce from their 10 acres is marketed within Montana. Ernie Harvey manages a herd of about 400 Brown Swiss cows, bulls, calves and steers that make up Lifeline Dairy. Long revered by the Swiss as an excellent, dual-purpose breed, the Brown Swiss produce rich milk, which is used on the dairy to make cheese, as well as delicious beef, which is sold throughout Montana. The dairy also "recycles" many feeds by raising pigs which are then sold as pork cuts and in home style sausage.

While I wasn't able to easily find raw milk, I did find a brand that worked. It actually says on their website that they pasteurize at the lowest temperature. I could see the difference immediately. It set up just as the picture in the book indicated....with much firmer curds to start. And, it tastes great. |

Our sources for milk were either too expensive (farmers market) or too pasteurized (Whole Foods). Finally the Whole Foods in downtown Washington DC began carrying this milk and over the weekend we gave the mozzarella another try. The results were FANTASTIC. Thumbs up for Snowville Creamery milk - it makes wonderful cheese. |

| Old Silvana Creamery is truly a family owned and operated dairy. Jim and Kelli Sinnema and their four children ages 8 to 17 do all the work on their farm, from milking the cows, bottling the milk and distributing their raw Guernsey milk from downtown Bellevue to the Canadian border. They also have on-farm sales since they are conveniently located 1/2 mile west of Interstate 5 (exit 208).
Old Silvana Creamery is at this time, the only 100% Guernsey raw milk dairy in the whole state of Washington, they have no other breeds in their herd. Guernsey milk is well known for its excellent cheese making properties as well as the great taste! They milk the cows with machines but into buckets rather than through a pipeline, they believe it is gentler on the milk and helps retain a good cream-line in the milk. Some believe the pumps that are needed to transfer the milk from a pipeline into the milk tank can partially homogenize the milk not to mention, requiring much more chemical detergent to try and clean all the additional surfaces that a pipeline system requires.

Here in Japan, I order all of my milk online or pick it up at the supermarket. We have several choices of low-temperature pasteurized milk which is sold also at the local supermarket. We also have UHP milk and everything in between, but surprisingly UHP is harder to find than low temp pasteurized, as people here like creamier tasting milk and are less concerned about fat.
I have yet to find skim milk in the low-temp pasteurized variety, and I use calcium chloride to get a firm curd.
These are inexpensive while utililzing low temp pasteurization.
There are also specialized dairies that sell direct to customers, but their milk is quite expensive
