Milk is one of the most changing foods on this planet. From the time it leaves the udder it is destined for biological changes both from enzymes in the milk as well as inherent (from the cow) and environmental bacteria. Add to this the modern day process of milk plants and their desire to cook the milk to improve shelf life and you have a very dynamic process resulting in very different milks from source to source.

We have received a brucellosis test on our milk for the last 20 years each month that has been negative. We run an antibiotic test on every load that is bottled, but we are semi-organic and would not really need to as antibiotics are only used in emergencies to spare the life of an animal(sometimes 1 time in 4 months). We go by California standards as South Dakota does not have any.

Dairyland Alberta, Canada		"I have used Dairyland (whole milk – which in Canada is 3.25%, as well as 2% and half and half), which is a large brand found in all grocery stores in Alberta. I’m not sure if it is available in other provinces in Canada but it is one of two brands ubiquitous in Alberta anyway. It worked well. I also tried an organic milk from Saxby Creamery (an Alberta brand – I’m not sure how local it is but there are a lot of dairy farms here so I suspect most of the milk didn’t travel too far (‘too far’ being relative as Canada is huge and sparsely populated compared to the US)) and it worked as well."

Takanashi Zao		Here in Japan, I order all of my milk online or pick it up at the supermarket. We have several choices of low-temperature pasteurized milk which is sold also at the local supermarket. We also have UHP milk and everything in between, but surprisingly UHP is harder to find than low temp pasteurized, as people here like creamier tasting milk and are less concerned about fat. I have yet to find skim milk in the low-temp pasteurized variety, and I use calcium chloride to get a firm curd. These are inexpensive while utililzing low temp pasteurization. There are also specialized dairies that sell direct to customers, but their milk is quite expensive

E-Mart	Past	"I made LOTS of cheese while I was in Korea and was very surprised to find out that I could buy milk right at the local E-Mart. You can buy low temperature processed milk at E-Mart by the gallon! And it’s cheap. Remember that milk processing temperatures are listed in Centigrade so that the milk temps will be listed that way as well. Cream is also pretty inexpensive. But cheddar cheese and paremesan cheese already made is very expensive. So go ahead and make your own cheese! AND Cheesemaking.com was my best source for cheesemaking supplies while I was there!"
