I ordered your 30 minute Mozzarella Kit last week, and had very little luck with the milks I found in my grocery store. I wanted an easy and quick way to make the cheese, and finally found a milk. I used whole milk (Golden Fleece). It is pasteurized and non-homogenized. They use a low-temp process for pasteurization, and I finally had success with my Mozzarella! If you live nearby you can still get home delivery. Milk is pasteurized in a low-temperature (146°) vat pasteurizer, held at this temperature for 30 minutes and then cooled to 40 degrees, or lower, before it is bottled.
It is not homogenized, so the cream rises to the top of the milk. Awesome.

We had practically given up on making homemade cheese. Our sources for milk were either too expensive (farmers market) or too pasteurized (Whole Foods). Finally the Whole Foods in downtown Washington DC began carrying this milk and over the weekend we gave the mozzarella another try. The results were FANTASTIC. Thumbs up for Snowville Creamery milk - it makes wonderful cheese.

We have two pure Friesian milkers with one young heifer and will acquire an additional pregnant Friesian in a month or two. We produce about 12 litres of raw milk a day and sell it to the local Maasai and other, community by bicycle. We charge 20 Kenya shillings, about 22 US cents for 2/3 litre.

Here in Japan, I order all of my milk online or pick it up at the supermarket. We have several choices of low-temperature pasteurized milk which is sold also at the local supermarket. We also have UHP milk and everything in between, but surprisingly UHP is harder to find than low temp pasteurized, as people here like creamier tasting milk and are less concerned about fat.
I have yet to find skim milk in the low-temp pasteurized variety, and I use calcium chloride to get a firm curd.
These are inexpensive while utililzing low temp pasteurization.
There are also specialized dairies that sell direct to customers, but their milk is quite expensive
