I ordered your 30 minute Mozzarella Kit last week, and had very little luck with the milks I found in my grocery store. I wanted an easy and quick way to make the cheese, and finally found a milk. I used whole milk (Golden Fleece). It is pasteurized and non-homogenized. They use a low-temp process for pasteurization, and I finally had success with my Mozzarella! The cheese has an incredible flavor. |

If you live nearby you can still get home delivery. Milk is pasteurized in a low-temperature (146°) vat pasteurizer, held at this temperature for 30 minutes and then cooled to 40 degrees, or lower, before it is bottled.

Our sources for milk were either too expensive (farmers market) or too pasteurized (Whole Foods). Finally the Whole Foods in downtown Washington DC began carrying this milk and over the weekend we gave the mozzarella another try. The results were FANTASTIC. John and Dawn Habeck. My husband and I are a Grade A Dairy Farm that currently sells raw milk to about 1,000 customers per week. We have been making cheese from our milk and so have many of our customers. Our somatic cell count runs between 50,000 to 100,000 very consistently. We tested our cows for tuberculosis and will do so each year. We have received a brucellosis test on our milk for the last 20 years each month that has been negative. We run an antibiotic test on every load that is bottled, but we are semi-organic and would not really need to as antibiotics are only used in emergencies to spare the life of an animal(sometimes 1 time in 4 months). We go by California standards as South Dakota does not have any.

However, when we are able to take a little trip, we travel to Wisconsin (80 miles or so) for certified organic raw milk. This is a farm share program, the only way to legally buy raw milk in Wisconsin.

We have two pure Friesian milkers with one young heifer and will acquire an additional pregnant Friesian in a month or two. We produce about 12 litres of raw milk a day and sell it to the local Maasai and other, community by bicycle. We charge 20 Kenya shillings, about 22 US cents for 2/3 litre. |

Here in Japan, I order all of my milk online or pick it up at the supermarket. We have several choices of low-temperature pasteurized milk which is sold also at the local supermarket. We also have UHP milk and everything in between, but surprisingly UHP is harder to find than low temp pasteurized, as people here like creamier tasting milk and are less concerned about fat.
I have yet to find skim milk in the low-temp pasteurized variety, and I use calcium chloride to get a firm curd.
These are inexpensive while utililzing low temp pasteurization.
There are also specialized dairies that sell direct to customers, but their milk is quite expensive
