    4-1/2'Wide x 5"High with follower and open bottom. A food grade polypropylene cheese mold imported from France. This mold will work with any of our presses and is used when making up to a 2 pound cheese from 2 gallons of milk. This mold can handle a press weight of up to 100lbs.

    This 2 lb mold does not need the amount of weight for pressing as our larger M2 mold so therefore does not need a closed bottom to contain the curd mass. The open bottom also provides the best drainage.

    We used this to make a farmhouse cheddar, and it turned out amazing.

    Perfect size mold give Deli size results

    I used this for the first time making 3 gallons using the Traditional Swiss recipe. That almost filled up the mold and yielded an tube of cheese about the diameter of a deli cheese or meat. Perfect for sandwiches.

    The follower has a ring about 1 inch smaller diameter than the mold. I cut a piece of Oak into a disc that fits on my press, and pushes on the entire ring. The result is very even pressure along the full surface of the follower.

    The plastic of these molds is really thick - over 1/4 inch. I have no doubt this mold will outlive me.

    Exactly what I needed!

    I made a DIY cheese press to start out my cheesemaking adventures, but I bought this mold instead of trying to press with any other type of homemade mold. I'm so glad I did. Works perfectly. Now I feel the need for a NE Cheesemaking Supply press too. Wish list!

    I love this mold. My cheese is much easier to work with using this mold than the basic kit mold. I originally had some doubt about having no bottom but it worked without flaw in my dutch style cheese press.

    I have not had this little cutie for long and as others have said it is sometimes difficult to fit the curd from 2 gallons of milk in here, however I love it for making a sample size of a larger cheese for sharing with my family.

    Hard Cheese Mold - Small

    Perfect for curds from 1 to 3 gallons of milk, for all types of cheese, whether pressed like the Tomme or Cheddar, or drained like Blue cheese.



    I use thin cheap nylon cloth, and that fits into this mold. But if you use cotton cloth of any type it will not fit between the follower and the mold, so you'll need to file the follower down to make it smaller.

    perfect mold!

    i was using the mold that came with the farmhouse cheddar kit, and the cheese came out fairly lumpy and strangely shaped due to the mold not being solid enough. this mold made it super easy to have a smooth cheese and the follower is extremely handy

    I love this mold! I tend to get more than 2 pounds of cheese with 2 gallons and it does not all fit. But what does fit comes out perfect every single time. With a proper shape it makes it really easy to wax after it dries. Thinking of starting to make double batches and getting the larger mold.

    Lighter Than Expected

    Looks like thicker poly on website. Does the job though. Would be nice if it came with a second follower that could have holes drilled in it to use as a base. Works well for a 2 lb batch.

    An essential purchase for someone starting out

    I have used this mold successfully for 2 gal batches of Feta and Cheddar. I will agree with other reviewers that it is a bit small for 2 gal recipes, but I've always been able to work all the curd in.

    So far I have put over 50lbs of pressure on this and it has held up well. Drains well, and cleans easily.

    Good basic mold

    This mold was used to contain the curds made from 2 gallons of milk. The mold was not quite large enough to contain all the curds. Having said that the mold worked very well.

    It works for small cheese

    I make thousands of pounds of cheese at home, and I usually use the bigger molds that can fit five pounds worth of curds. But when I teach my cheesemaking classes, I show people how to make cheese with smaller batches, and this mold works well for that.

    What I don't like about it is that it doesn't have a bottom. You have to use cheesecloth.

    Most useful mold for home cheese makers

    I run a cheesemaking school in Longmont, Colorado and use this mold in my classes more than any other. It is perfect for one gallon batches and can be used for any hard cheese as well as brie & camembert. It's inexpensive and easy to throw in the dish washer to clean. If you're only going to buy one mold, this is the one!

    Love This Mold

    This is my first "big boy" mold and it worked well. I would like to move up to a bigger sized mold, but I'm limited to the amount of milk I can process. The follower is great!



    what I don't like is the lack of a bottom. It's the reason I can't give it a full five stars.
