    4-1/2'Wide x 5"High with follower and open bottom. A food grade polypropylene cheese mold imported from France. This mold will work with any of our presses and is used when making up to a 2 pound cheese from 2 gallons of milk.

    This 2 lb mold does not need the amount of weight for pressing as our larger M2 mold so therefore does not need a closed bottom to contain the curd mass. The open bottom also provides the best drainage.

    I have now used this mold several times, and i consistently find that it will not hold the amount of curd produced by recipes for 2 lb cheeses, using 2 gallons of milk. I believe this mold should be about 1/2 - 1 inch taller or slightly wider. Count me as disappointed.

    Sometimes smaller is better. I was having trouble making pressed, aged cheeses and one thing making it difficult was working in such large batches. I found some recipes on this site with smaller batch options and bought an M3 mold, and working with a little less milk made the process more manageable. Plus, I can have more cheese variety aging in my small cave, since they take up less space. And, given that I still make beginner mistakes, I'm not investing in as much milk for each batch. Love the smaller mold!

    I've been using this for several years now and it still works great. It is good quality plastic and hasn't shown any breakdown yet. Cheese drains well from it.

    <p>I made a 2 lb Parmesan style with it recently and it was my best looking cheese to date. I was worried about the lack of a solid bottom but it was a non-issue at 20lbs.</p>
