    3.5" high, diameter is 7.5" at the top, tapering to a 7" closed bottom, which allows for stacking of multiple molds. Also includes a follower for more serious pressing. Will accommodate a 4-5 lb cheese. This mold is ideal for Blue, Tomme, or Trappist/StPaulin style.

    This is a tapered mold designed for a light pressing weight of 8-12 lbs. The top is wider so several molds can be stacked on top of each other for pressing. We've found that this mold will easily handle up to 100 lbs for a higher pressed Gruyere style cheese. Turning the cheese several times with no weight towards the end of the molding stage evens out the top and bottom diameters so it ends up with a nice little bulge in the side.

    The follower does not go all the way to the bottom so I usually store these with the follower upside down in the mold which makes it easy to stack them on top of each other.

    For higher pressure and a straight sided cheese we suggest the our M2 mold.

    Great size and shape

    I really like the nicely shaped Tomme and Kefalotyri I can make from 5 gallons of milk. Sturdy like all the other molds, and a good price.



    (Don't use this one for 3 gallons or less, that would make a flat pancake of cheese that would dry out too soon. Use the Small Hard Cheese mold instead.)

    I've used this mold for a few wheels of a room-temperature washed curd cheese and I love it. I love that it gives my cheese a rounded edge and I like the size of the finished wheel for a 2-gallon batch.

    Great Mold for 4 Gallon batch

    We used this mold for the first time last week to make a 4 pound Edam. We hope to use it again today to try Jim's wine infused chesse recipe. It works well with the NE chessemaking cheese press.

    The Essential Large Tomme Mold

    This tough and very friendly mold guides me toward making a superior product. The size allows me to gage the best amount of curds to use, and the toughness allows me to push and press as needed. The follower is marvelous.
