    This water based coloring is naturally derived from the Annatto tree and will impart an appetizing yellow color to your cheese and ice cream. Most cheeses will yellow slightly in the aging process, but if you want a strong yellow color this is for you.

    CONTAINS: Water, Annatto, Potassium Hydroxide, Castor Oil

    DIRECTIONS: To add a warm cream color to winters milk or pasteurized commercial milk, it takes about 20-30 drops (.2-.3 tsp.) per gallon of milk. To produce a highly colored cheese it can take 5-10 times this much..

    Always add before Calcium Chloride and Rennet. Dilute color with soft or distilled water. Always keep color out of contact with salts.

    STORAGE: Store tightly closed in a cool, dark, dry place. Will last indefinitely.

    Q. I used your instructions for adding color to your cheddar recipe in Rickis book --2 drops per gallon. My cheese is still white. Then when putting the bottle of coloring in the fridge I notice it says 25 drops per gallon.
    Seems since the coloring and the recipe came from you they should be the same.Is there an explanation I am not aware of?

    A. As with most books and printed material, the information and instructions are locked in at the time of writing. If changes take place, we are not always able to update that information in our book. The product that was available back when the book was last revised was much stronger than available today, so today the instructions are to use more. It is always best to read through all of the product information listed on the product itself for the most current usage information.

    Al ittle goes a long way!

    I made my own annatto from paste and it worked ok, but this stuff is super. Nice even color. Just a few drops gives you the color you want.

    Natural Color

    Really like that this is natural coloring. Works great! I like coloring our colby orange. We also make mozzarella and it's great to have the variety of color. I especially like it when making pizza!

    Marble cheese made easy!

    My kids love the cheese we make, but they get so excited when I can make them marble cheese, because that's what all the kids at school have. They love to tell friends that their marble cheese came from the farm, not the store. I even used a few drops of annatto in some homemade mac and cheese once when we had some very picky eaters over. That familiar orange colour made them willing to try someone home made.

    Doesn't take much

    When I first used the colorant, I realized it darkens by the end of the process. It really does not take much, and has lasted me a long, long time so far. Great golden color (just be careful as the cap can loosen and color your fingers when removing from the fridge).

    Cheese Coloring

    Annatto is a natural coloring ingredient that comes from the Annatto Tree. Actually the coloring comes from its seeds. I am an organic gardener and cheesemaker and was always leery of 'orange' colored cheese but sometimes I like my cheddar cheese that famous orange it is known for to differentiate it from other naturally white cheese in my 'cave'. It is nice to know that this isn't just some food coloring but comes from natural ingredients.

    Made my daughter like homemade cheddar

    I originally made my cheddar white and uncolored. My daughter (an extremely picky eater), says, " but its not the color of my cheese". Her cheese, meaning Kraft singles.... so, i ordered this coloring to trick her. It worked! And now, she asks for "Daddy's cheese". Thanks again NECMC.

    I really liked this product. The only bad thing about this product is that I had to use more than what the insturctions said. I use 1/2 a tsp per gallon and it works just great I think that every one should try this product
