Used for lactic cheeses, and mold ripened cheeses, such as Brie and Camembert. This culture is a classic strain, mold-like in appearance, with an intermediate flavor and aroma. Slight "mushroom/earthy" aroma.

USAGE: Added directly to the milk, one small pinch (less than 1/8 tsp) per 2 gallons of milk. This method is best for home/hobby cheese making.
Sprayed on, dilute 1/8 tsp in 4-8oz of buffered water (8oz non-chlorinated water with 1/8tsp salt and 1/8 tsp sugar); allow to reactivate overnight in refrigerator before using. This method is recommended if you are processing a large quantity of cheeses. When spraying onto the surface, the moisture, temperature, and air circulation must be strictly monitored to avoid wet surfaces.
