Classic white mold. Characteristics: Low proteolytic activity, Moderate lipolytic (aroma),Low surface density and height. Generally used to achieve moderate-slow ripening time.
Great for Brie and Brie, goat cheeses such Crottin, Valencay and St Maure, and Italian style cheeses like Robiola.

USAGE: Added directly to the milk, approximately 1/8tsp per 1-5 gallons of milk.
If spraying on, dilute at a rate of 1/8 tsp per 4-8oz buffered water (8 oz. non-chlorinated water with 1/8 tsp salt and 1/8 tsp sugar) and allow solution to sit in refrigerator overnight. This method is recommended when processing large quantities of cheese. When spraying onto the surface, the moisture, temperature, and air circulation must be strictly monitored to avoid wet surfaces.
