    Classic white mold. Characteristics: Moderate proteolytic activity, Low lipolytic (aroma), High surface density and height. Generally used to achieve moderate-slow ripening time with low aroma.

    USAGE: Added directly to the milk, approximately 1/8tsp per 1-5 gallons of milk.

    If spraying on, dilute at a rate of 1/8 tsp per 4-8oz buffered water (8 oz. non-chlorinated water with 1/8 tsp salt and 1/8 tsp sugar) and allow solution to sit in refrigerator overnight.

    STORAGE: Store in the freezer.
