    Biena (Abiasa) Thermophile Type C culture.

    For the production of Alpine type cheeses such as Gruyere, Fontina and Beaufort. Works well with propionic bacteria for eye production in cheese such as Emmental and Jarlsberg.

    CULTURE CONTAINS: Streptococcus thermophilus, Lactobacillus helveticus

    YIELD: 1 dose- will inoculate approx 40 litres of milk.

    DIRECTIONS: Use approx. 1/2-1tsp per 1-2 gallons of milk.

    Add directly to your milk when called for in the recipe. Sprinkle culture on surface of milk and allow to rehydrate 1-2 minutes. Mix thoroughly to evenly distribute culture.

    STORAGE: Store in the freezer.

    NOTE: This product has Kosher and Halal certificates. Certificates available upon request.

    Beware!



    Great culture - it worked very well for the batch I made with it. But...beware! The powdered culture is loose in the bag - this is not a foil bag with packets inside. I tore into it and culture dust went flying. Oh well...live and learn.

    Thermo C is very versatile

    <p>Since I did not have MA4002, I used C63 Thermo C in combination with MM100 to make manchego. Looks like it did the job successfully.</p><p>Withheld one star because of price point.</p>
