    I bought cultures off Amazon that didn't work (explains the free shipping). The cultures I bought directly from the NECMSC worked, spot on!

    Mozzarella

    I bought this product through another vendor on Amazon that turned out to be a dud and would explain why prime shipping is free. A different line from a different vendor couldn't achieve the acidity needed for mozzarella. I finally just bought the culture directly from the New England CheeseMaking Supply Company and voila! Mozzarella. I wasted a lot of milk and time when I should have just bought what I needed from the source.

    Thermophilic C201 covers hard cheese base

    <p>I used C201 with Flora Danica to make fourme d'ambert, an impressive blue cheese that wows a party and even turns blue sceptics into fans. It also works well for gruyere.</p>

    The premeasured one use packet is helpful. A lot of the cultures are expensive, however. It would be helpful to know whether these could be used to make a mother culture to decrease cost. Also including other names that may be used for the cultures you provide would be helpful. I've seen a number of starters in cheesemaking books, and I don't know which recipes I can use your products in.

    Handy packets for a 2 gallon batch. Easy to store and last a long time when stored in freezer. I have made mozzarella, provolone, and Parmesan. I am still working on the parmesan one it's a bit harder to make and get right. :) I have forgotten to mention all the recipes and help for making cheese on the website they have too. It is really helpful.

    I use these for class demonstrations - easy to use and long lasting, haven't had any issues. I do feel like I'm overdosing most of the time, so I typically mete out the necessary amount using the thermophilic TA61 large pack when I need a thermo starter for making my own cheeses.

    <p>A nice large package of the standard culture for thermophilic high-temperature cheeses such as mozzarella, Vacho Toscano, gruyere and other Alpine cheeses. It is also used in manchego, even though that is made just like gouda cheese, at moderate temperatures.</p>

    So far I have used these to mostly make cheese curds (following Ricki's recipe) but now I have a cheese frig, so in about 9 months I will get to see how parmesan turns out! =)

    Thermophillic Direct Set

    These cultures are great because they are fool proof. Unlike the regular culture which makes a large batch, each of these little packets will get you a batch of cheese. The cultures are very active and dependable, just the thing for getting your Italian cheeses going.

    Another Success

    I use both the meso and thermophilic cultures in the 5 packet option. It is so much nicer then buying huge amounts that will go bad before I use the whole amount. Packets are also so easy to use in recipes.



    I have had only success with these cultures. If the texture was off - that was my fault with pressing too much or too little :)
