I've gotten the rennet tablets, vegetable rennet and now the regular liquid rennet. They all work perfectly so you never have to worry you'll ruin your milk and waste all that time.

This rennet makes great cheese, and I'd recommend it-- if you are alright with using the enzyme from calve stomachs.

I have purchased about 3 bottles of this (over time) for my cheesemaking, but for my cheesemaking purposes I sometimes have to wait about 2 hours for a clean break (on milk that has been pasteurized at 161 deg F). I enjoy the ease of using liquid rennet as opposed to tablets, but my only critique would be that I would like to have an indication on the label as to when the product was bottled/set to expire.



Whenever I receive a bottle of rennet (or a culture) I write on the product when I received it so that I know when it is around it's expiration date. It would take a lot of the thinking out of the process for me if this was indicated on the packaging, since cheesemaking is such an exact science. My first two bottles of rennet didn't produce a clean break (with CalCl added to milk) the first two times, but the 3rd bottle I received seemed to be much fresher.

This is very easy to use. Easy to mix with Water and always works. Of course you must use non chlorinated water. I have even used this product after sitting in my fridge two years and it still worked. It arrived within three days of ordering. The bottle is great, but can be difficult if you have kids that continually open the fridge and rummage around. The little cap can come off and it can leak everywhere.
