I love this additive. Lipase powder will give you that true Feta flavor that you are looking for. If you do not have access to goat's milk, this is recommended for use as an additive to cow's milk to help replicate the sharpness that goat's milk adds to certain cheeses. Do not let the "very sharp" flavor profile description scare you. Remember that you are in control on how much you add. A little for a little sharpness, more for more sharpness. I have used Lipase Powder in two batches of Feta and love the flavor it adds. Follow the directions for diluting the lipase. When you first add it to cool water it will look like it makes a ball, then after about 20 minutes or so, it will dissolve completely. I used 1/4 tsp in the first batch and liked the sharpness, but wanted just a little more bite. The next batch I used 1/4tsp plus 1/8 tsp. (You will need the mini measuring spoon set if you do not already have them. You can also just use a 'heaping' 1/4 tsp in a pinch...this will be hard to replicate in additional batches.) That did the trick. The cheese was great.
If you have this product in your cheese making 'pantry' you can experiment with it. My latest creation is a Queso Fresco that I added lipase too. Made a 2lb batch. I cut it in half and I am going to wax and age on half for about a months to see what I get. The other half is wonderful. Pretty much a 'Mexican Feta'. I used it on a taco salad. With all of this 'Fusion Cooking', I thought what a wonderful Greek Taco Salad. LOL.
