I love this culture. I make cheese at least two times per week. I usually make cheddar and I get about 3 pounds of cheese out of 2 gallons of milk. I use this culture and 1.75 gallons of milk and .25 gallon of heavy whipping cream. I am having to upgrade my press because the press I got with the kit does not completely contain the cheese. Do not forget to make your ricotta cheese from your left over whey.

I use this culture mostly for my cream cheese. It is reliable and easy. Highly recommended. I do have to divide the packet contents because I work in small batches, and that's a bit of a pain, but that's really more of a me problem!

I have had great success using this culture to make fresh goat milk chevre. The quantities provided in the individual packets are the perfect amount for the batch sizes I work with and the instructions are very clear. I have not had a bad experience using these cultures in the year and a half I have been making fresh cheese. Highly recommend.

The premeasured one use packet is helpful. A lot of the cultures are expensive, however. It would be helpful to know whether these could be used to make a mother culture to decrease cost. Also including other names that may be used for the cultures you provide would be helpful. I've seen a number of starters in cheesemaking books, and I don't know which recipes I can use your products in.

Last year was my first year with my doe's milking... having so much I froze much and in the winter experimented with the hard cheese as I had quickly mastered the soft.....the end results are my family & asking for more Gouda (called goata) having plenty more culture and the willing to provide i sadly can't comply this year as the buck we bought did not produce as he did the year when we leased him ...but the best news was that the culture will last longer so perhaps we'll be milking in the fall!!!!

I use both the large and 5 packet cultures. I keep all my cultures in the freezer. Have not had a failure due to these cultures. The smaller 5pk packages are perfect for most of the cheeses I make. If you are someone that doesn't make a lot of cheese, these are great!

I am a beginner cheese maker. I ordered the Basic Hard Cheese Kit. I am having great fun learning the process! I used all of the culture in my kit and needed more. I like that the culture is pre measured....a great help for a beginner! My cheese is aging now. Can't wait to share it with my friends.

I've used this culture for a variety of soft cheeses. It makes a great, somewhat sour cheese that never seems to stick around for very long ;).
