I have used this culture many times to make my soft goat cheese and it is absolutely wonderful. I made a mother culture...I know it's not necessarily recommended. The culture has its own rennet. I just add a few drops when I make the cheese.

I realize this is usually made with goat's milk, but I don't have a source so I use raw or pasteurized cows milk. It works great. I chill the cheese for easy handling then make 2" by 2" rolls and roll them in a mixture of local organic spices. So good on crackers. I also put fresh on my salads. This is so easy to make with directions right in the packets.

and so yummy - folks just love the chevre i make with my Alpine milk and your wonderful culture. the only problem is that when people ask "how do you DO it??" thinking it's difficult and i have to admit (with embarrassment) that it is so easy to make this cheese with your culture. love it. use a LOT of it. thanks.

Can make less chevre dividing the culture, saving the rest for future use - can be out of the freezer so it can be transported. I have it delivered to the US and then take it to Jamaica to make goat cheese! Easy and successful!

We were given a packet from Tess of Off The Vine Market with the goat milk we purchased from her market. My daughter in laws and I followed the directions and patiently timed the outcome. We were surprised to find a fromage textured cheese waiting to be sampled and spread on bread we made the day before. Thanks Tess for suggesting this treat that we will definitely make again.
