This is a wonderful sour cream to make. Very consistent flavor which is delicious. I wish they had it in a package to make a smaller quantity as sometimes this is a little much for a small family to get used timely.

This extra delicious Sour Cream culture tastes exactly like the "Smetine" brand we ate when I was a kid. Wow! I thought that was gone forever, now you can make it at home in the USA.



Guess what - in Europe it's very common to find delicious sour cream like this in stores and restaurants. Probably made with the very same culture mix from the same company.



It's really easy to make and the little packets are convenient.

I love this culture. I use my Yogatherm to culture a quart or two of fresh cream from my Guernsey cow. To get a thick, stiff sour cream I use a double layer of butter muslin to drain off the excess whey. The result is perfect for using in sauces like Stroganoff or Swedish meatballs. If it is too stiff for dip, I add a little cream or mayo to get the right consistency.

I have made sour cream with this using both half & half and skimmed milk. The skimmed milk results were on par with store bought sour cream and probably was a bit better because it was fresher than store bought. The half & half sour cream was by far better than any store bought I've ever had. Even using half & half the cost is less than store bought.



I highly recommend this product for anyone who likes sour cream and uses it on a regular basis.

This culture is forgiving! I had to mix heavy whipping cream and regular full milk to get the recommended light cream fat content. I also didn't have a thermos of yogotherm to put it in, so I plastic-wrapped over the 1-quart sauce pan I mixed it together in, wrapped that in a towel, and kept it in the heated room of my apartment overnight. I let it set for about 16 hours before checking and what I found is just beautiful--I can't wait to make a chocolate coffee cake, some stroganoff, and top baked potatoes with it! (In Japan, our sour cream is a little different from what's common in America; it's very expensive and the supply is unreliable--but with this culture, I can finally enjoy it, again!)
