Good deal but....

We bought this a while back and finally got around to making Mozzarella. We had fun making it only wish we had bought the Lipase to flavor it. Followed the instructions easily and the video was great help as well. I will recommend this to friends but suggest they get a few other items as well. I would also consider a different thermometer, but I had an instant read thermometer that worked well.

The kit worked well enough for the first time. I used raw milk which set much faster than the instructions envisioned, so the cheese was tougher than I would have liked. And of course it's pretty bland. But I was glad to have begun. There are many sets of instructions now and they all differ somewhat which is disconcerting. Also there are all these online corrections to the printed ones. Same reaction.

My real disappointment was with the DVD. For $24 (list) I was expecting something fairly polished. This is basically a very crude home movie of a bunch of cheese making sessions. Fun, but the videos on Youtube are a MUCH better help to making mozzarella. The DVD actually died when Ioaded it in the player, but by playing with the controls I got it to play. There is no menu at all, you just go from beginning to end.

All in all I'd save the $8 and buy the mozzarella kit and the cheese cookbook (which seems quite good) separately.

As a complete novice at cheese making I expected my first attempt to be somewhat problematic. Watched the DVD and read the book,then decided to wait until I had the Lipase. The book is outstanding - I have now read quite a few books on cheese making and none compare. Anyway, back to making the Mozzarella, it was amazingly easy and the results so good I will not be buying shop bought Mozzarella again. Okay, I confess it took me 40 minutes not 30, but am working on that goal.
