As I just started making cheese I cannot judge yet what the quality of the cultures is. I do feel that the price is good for 15 cultures for 18 dollars.

This is the product I buy most often from NECS. I love that it provides me with a range of choices for my cheesemaking. Recently, I've started moving towards more specific strains, such as Flora Danica and Thermo B, but I still keep this set on hand for use in my everyday, farmhouse style cheeses.

<p>I ordered a hard cheese sample pack. Well I received the chemical packets in a timely manner. The advertisement indicated several different hard cheeses that I could make from the chemicals. Well there they sit in my refrigerator for the lack of a recipe. Well I guess that is hard cheese.

Quick math shows that this sampler is a good value. I've only used the buttermilk so far and had great results. I didn't think I liked buttermilk, but I wanted to make cultured butter. The buttermilk itself was a great surprise! The butter turned out very well and the remaining buttermilk was fantastic in biscuits.

The Hard Cheese sample pack is great. It gives us 5 packets each of mesophilic, thermophilic and buttermilk culture which is wonderful for those of us making hard cheeses or for those just getting into hard cheeses. Much cheaper buying it this way than individually.

This is a great starter pack for those new to cheese making or those who use these particular cultures regularly. This was my first purchase in my cheese making adventure. I wasn't sure how difficult the recipes were going to be or what I would actually like back then. This starter packet allowed me to purchase a small amount of each type so I could try various recipes to figure out what I (and the family) liked. Additionally, I probably would have never splurged for the buttermilk culture, so having that included was almost like a bonus (there's lots of stuff to do with buttermilk!). All cultures are easy to use - warm your milk, add the packet (via your recipe's directions) and boom - you're good to go. It's hassle free and worry free. You can just toss in a packet as opposed to trying to figure out what a pinch of a culture is when you don't have a mini measuring spoon set or when you're too ill prepared (like I am) to keep prepared starter in your freezer. Great product!
