Long enough to reach the bottom of my large pan and easy to handle. Does a very good job of cutting the curd.

It is useful to have a long curd knife but this blade has quickly developed little rust or corrosion spots with normal cleaning. Not so much what I was expecting.

This is long enough, stiff enough, limber enough, and it won't cut the container if I use a plastic container. Works very well for my purposes.

The right tool for the job! :)

Ok-let me say this first-I "curd" most of my cheese right in the glass jar that I filter the warm milk into...so this long, curve ended knife has suddenly made my curding life a LOT easier and more effective over the large butcher knife I was using all these years. Price is right too! Cleans right up in the dishwasher-which my wooden handled butcher knife was spared from...
