I received my press about a month ago, and I was so excited to use it! The first time I made beautiful stirred curd cheddar. Jamie was so helpful via email to make sure that I was pressing my cheese correctly. The second cheese I made was Pepper Jack and I am so delighted with the ALL AMERICAN MADE cheese press. I would recommend spending the extra money if you're not handy like me with making things. The quality cannot be beat. Thanks!

I bought mine about 8 years ago and will be buying another one so I can make 2 batches of cheese. You can really tell this is made in the U.S.A., great craftsmanship. I have looked at what others are offering, and they dont come close to matching the wormanship of this. I highly recomend this.

Before buying this product I have gone through quite a few single spring presses just to have them fall over night, can't believe how much milk, time and possible cheese I had lost. Upon receiving my new press from NECM I noticed that he design was different, it was dual spring loaded and can be used with any mold. I have not used it yet but just by looking at it I do not need to call a helpdesk came with great instructions. Moral of the story ... Buy your equipment and your needs through a company that specializes in cheese you will notice the difference right away. BTW just made my first Jack and can all ready tell that it was pressed properly. Thanks Ricki

This cheese press was recommended by the farmer who conducted the cheesemaking class which led me to the art of cheesemaking. She was 100% right! This press is easy to use, relatively compact, easily sterilized and is exactly what me, as a beginner, needed. I would certainly recommend this press to anyone interested in cheesemaking.

We bought this cheese press after my husband and I attended a Cheesemaking 101 class a few years ago. We've successfully made the farmhouse cheddar a few times and after a bit of a hiatus from hard cheeses, am looking forward to trying Sarah's updated Colby! I wanted a product that would be easy to use and maintain and this is it.

I bought this press from you ~20 years ago and use it for parmesan, emmental and cheddar cheeses. I have a parmesan pressing now. It is simplicity to use, and still works and looks like new. Kudos to the designer and maker. Thank you.

Love the press but I feel it takes some effort to operate.

1. When curd volume reduces under press, the pressure also reduces so you have to keep pushing it down once in a while to keep the pressure up. I have barbell weight but it's not too easy to balance them on the press.

2. I wish the lower wood bar can stay in place when you want to take the mold out to flip the cheese/re-dress the cheese cloth. I have to take everything out in order to do that.

3. It would be helpful to have marks on two rods so pressure is equalized. I used a permanent marker to mark it.

I am new to cheese making, and wanted to invest in a quality cheese press without having to do a lot of "trial and error" shopping. This cheese press is very well made, and easy to use. I am very happy with this cheese press, and with this company. Thank you!

This press, while a tad pricey, is a great product. Easy to use and I believe will last virtually forever. The guage the pounds of pressure needed is easy to read and set.

The six month wait for the cheese to age isn't great, but the end result is spectacular! We were using coffee cans and bricks for weights before getting this press. It is so easy! So far we've been making 12 pounds a month and keeping them in our wine coolers - better to have great cheese than cool wine :-) Thank you for a simple-to-use and efficient press!

Before I got this cheese press, it took 3 people to lift the weights and place them evenly on my old cheese mold & follower! Now I can easily press the cheese myself, and the finished cheese is SO much smoother and prettier!

Thank you for making this wonderful press! It is made so well, and is definitely something that will be passed on to future generations!!

Buying this beauty was a bit challenging to afford, but I definitely do not have any regrets! It is easy to use, easy to clean, and compact enough for storage. I have made many rounds with it since getting it a month ago. I am careful to keep it clean and dry due to the wood based nature. One comment I'll make to the manufacturer....mine arrived with the cylinder in an oval shape not round. :( It makes turning over and redressing the cheese a little challenging. Doesn't affect the cheesemaking process, just a bit of advice to look into that.

After years of using a homemade two-board-four-dowel-hand-weight system, I invested in this cheese press. It is well made and I really like the metal drip tray with the drain spout. It keeps the moisture off of the wood, protecting it from warping and splitting.
