Two trends have been identified in Wisconsin dairy production in recent years. One is the increase in artisan and specialty cheese production-138% between 1993 and 1999. The second is the trend toward value-added, direct marketing of farm products and the increased interest in farm-based dairy processing and marketing. The WI Dairy Artisan Network was created to provide mentoring services to those who are interested in learning more about value-added dairy opportunities. It is also a network for information sharing, shared services such as training workshops and direct marketing support for those who are already building farm-based businesses.
