This rennet is a non-GMO, 100% flower extract rennet, made in the USA from thistle (Cynara cardunculus). Commonly used in Spain and Portugal, the cheeses produced are usually small scale, artisanal cheeses made with sheep and goat’s milk, such as Ibores.
SIZE OPTIONS: 2 oz. and 1 kg (approx 32oz.)
USAGE: Approximately 0.5 to 1 tsp per 1 gallon of milk, added at the same time as the culture, and stirred thoroughly (this rennet needs to be stirred longer than other liquid options). Allow to set for 2.5 to 3 hours to achieve a firm curd. Please note that this usage rate is a guideline, and may need to be adjusted for milk type and/or quality. If the final cheese has a bitter taste, use less rennet on next batch.

KOSHER STATUS: The 1kg bottle is Kosher (Kof-K) and Halal (IFANCA).
The 2oz bottle is repackaged without kosher supervision, which voids the kosher certification.
