    These fine mesh mats are good for use under a really soft cheese, like brie or camembert, because it will leave a less textured surface. The mats are great for use as the top and bottom of the mold when flipping these types of cheeses.

    DESCRIPTION: Fine Mesh Polypropylene Cheese Ripening Mat (1.4x1.6mm)

    TO CLEAN: Rinse well with cold water after use, then wash with hot water and a neutral alkaline cleanser or dairy wash. We do not recommend using commercial detergents for this product. If mat is really hard to clean you can soak in the dairy wash before giving it a good scrub. If mat still retains an odor after a good cleaning, try hanging outdoors in the sun for a while, this is the traditional method used in Europe!

    I really like bamboo, but it's not easy to cut it to the sizes I needed, so this mat worked much better. I got the larger size and cut it to fit my needs. Another reviewer mentioned using it to separate cheeses in a cave, so I think I'll try that next.



    I was hoping it would be a bit stiffer, so it could stand alone when I put it under my brie molds.

    This is a great draining mat. Whether draining on a cutting board slowly or on a sieve, this works well and is super easy to clean up!

    cheese ripening mat

    I really like these mats better than bamboo mats. They are easier to clean and sterlize. I use them to air dry and age my cheeses in my 'cave'. I got the large version and cut it up to fit my shelves. The cheese rests on top of it.
