    Yeast-like appearance, mild flavor and aroma.Great for cheeses that require a smooth surface; great for washed and mixed rind cheeses, such as Reblochon, or brushed Tommes. Will also work in bloomy and lactic cheeses. Does not develop the "wormy" texture of other Geo strains. Creamy color, less proteolytic, slightly lower optimum growth temp.

    USAGE: Added directly to the milk, one small pinch (less than 1/8 tsp) per 2 gallons of milk. This method is best for home/hobby cheese making.

    Sprayed on, dilute 1/8 tsp in 4-8oz buffered water (8oz non-chlorinated water with 1/8 tsp salt and 1/8 tsp sugar); allow to reactivate overnight in refrigerator before using. This method is recommended if processing a large quantity of cheeses. When spraying onto the surface, the moisture, temperature, and air circulation must be strictly monitored to avoid wet surfaces.

    STORAGE: Store in the freezer.
