I had this cheese in Spain and when I saw Jim's recipe...

I got the 2 gallon size mold and have made three cheeses so far using Jim's recipe and the Manchego mold.

The recipe is straight forward and easy to follow.

The mold easily handles the yield of two gallons of cow or goats milk.

The pattern of the mold is beautiful and gives a nice, rustic look to the cheese. Irresistible.
